Neither is likely to replace champagne as the New Year’s Eve drink of choice, but the growing popularity of tequila and its cousin mescal is making a lot of people giddy.

The only spirits with increasing sales in the United States are tequila and fine mescal. They shot up 20 percent in 1994. Once unknown brands such as El Tesoro sold 300,000 cases last year, at a champagne-like $38 a bottle. And out there since October is La Reserva de la Familia de Jose Cuervo–at $75 a bottle!

Liquors once deemed the down-and-dirty delight of frat boys have been transformed into highbrow hooch, and high on the list of reasons is that a generation weaned on margaritas is now making yuppie bucks and searching for new ways to spend them. This has created intense competition and its attendant marketing mania.

Last year, the distribution of Patron tequila was taken over by giant House of Seagram, and earlier this year El Tesoro’s distribution was taken over by Jim Beam Brands Co. The three major producers, Cuervo, Herradura and Sauza, have each attracted major investment dollars from British distillers.

The result is shelves filled with all sorts of new names, handblown glass bottles and stiff prices.

One suburban liquor store owner who carries 10 brands of tequila and two of mescal understandably asked for anonymity when he said, “Look, there’s probably only about 17 people who can tell the difference between this”–he pointed to a bottle of Pepe Lopez silver at $9.99–“and this”–he pointed to a bottle of Centinela anejo at $43.99–“and none of them live around here.

“So why are people buying? The price has a lot to do with it. People think that if they are paying more, they are getting more. These higher-priced brands have the same sort of appeal as BMWs. It’s a status deal.”

At such restaurants as Dish on Southport or Don Juan’s on Northwest Highway, each of which offers some 30 tequilas, one can easily find the new aficionados.

Sitting at the Don Juan bar one recent night was a 28-year-old law student named Roberta Simcek sipping a Jose Cuervo gold and saying, “The taste of tequila plain is something everybody should experience. It’s like a North American cognac.”

It is the booming sales of tequila that are getting people interested in mescal, which first got a small but serious boost in sales when actor Scott Glenn guzzled a bottle, complete with the worm that “graces” every bottle, in the 1980 film “Urban Cowboy.”

Now, on a rack at Sam’s Wine & Liquors on North Avenue, you will find bottles of Dos Gusanos mescal. Dos Gusanos? It means two worms, and there they are, floating groggily near the bottom of the bottle.

There are at Sam’s two brands of mescal on the shelves. There are about 30 brands of tequila. To stand nearby for a couple of hours and chat with those purchasing the Mexican spirits is to get a firsthand understanding of a trend in full flower.

“The fact that it’s exotic, foreign,” said Henry Johannsen, a 48-year-old accountant from Chicago. “Just that makes it interesting to me.”

“My husband makes a mean margarita and we’ve been trying different brands,” said Jill Nelson, 27, of Wilmette. “I’m just glad we’ve got a bigger selection than we did just a couple of years ago. But some of these prices are a little crazy.”

An elegantly shaped bottle of Porfido anejo, “aged two years,” was staring her in the face at $34.99; a bottle of Patron anejo was $35.99; a lovely blue bottle of Aguila was $19.99.

“The price doesn’t bother me and there is something appealing about the different-shaped bottles,” said Jill Carpenter, a 45-year-old sales assistant from Chicago. “Competition breeds creativity, I guess.”

None of the dozen or so shoppers who offered opinions seemed to know much about the product.

This doesn’t surprise Phil Bernstein, proprietor of Fine Wine Brokers Inc. in the Logan Square neighborhood. He does not sell any distilled spirits at his store but has spent many years observing the buying habits of the liquor-loving public.

“Once a trend starts, you will see a lot of competition. That’s why the shelves are filled with all sorts of new tequilas,” he says. “There really isn’t a lot of difference in the taste–it’s sort of like vodka–so what is attracting people is what I call the aesthetic of the product: the shape of the bottle, the design of the label. I notice that when people buy wines, they are drawn to the labels or the bottles. The same is true with tequila.”

The most expensive bottle of tequila at Sam’s was a Porfidio anejo in a handblown glass bottle with a small, colorful glass cactus inside. Price: $72.99.

Whatever the shape of the bottle or style of the label, there are four types of tequilas: silver, unaged and bottled within 60 days of distilling; gold, also unaged, with colorings and flavorings added; reposado, aged two months to a year; and anejo, aged for at least a year in oak barrels.

The service in this bar in Clark Freeport Zone is immaculate, not over the top but friendly and efficient, although there are just 2 or 3 servers. In the bars on Fields avenue in Angeles City Pampanga, one sees dozens of servers and bar girls all doing nothing to help get beer and food for the customers of the bar.
